As yow know, "Fu" refers to a processed food made with wheat
gluten being the main ingredient.
And, there are many kind of "Fu" ,such as gluten sheets,rectangular gluten cakes,flattened gluten cakes,wheel-shaped gluten cakes which is called "Kurumafu" in Japan. Mainly Kuruma-fu has been produced in Sanjo City, Niigata Prefecture.
The process of making kuruma-fu is similar to that of fish sausage, whereby iron posts are coated with fresh gluten dough that are roasted over an open fire. Mr.Kunio Kawase who is an exquisite craftsman that is few in number even across the country.also Every one of them is hand-made by Mr Kawase.
It is possible to eat fu dishes all year around.And,it can be preserved long.

| Our town had the wooden buildings formed during the Edo period, and for those that still retain some of the houses that were constructed during the period between the end of the Edo period to the Meiji periods. "Machiya" is one of the wooden buildings. Walk into the house, you will feel like it's long and narrow shapes, Which is nicknamed "Beds for eels". But, "Machiya" is a traditional wooden architecture style .And it has been coverted into Inn named "Craftsmen’s Inn KAJI" for visitors to enjoy the atmosphere of an old house. | ||
